Orotti (Rice ball or Thick Rice Pancake) Recipe

Ingredients Boiled water - 3 cup
Rice flour - 2 cup
Grated cocnut - 1 cup
Ghee - 3 Tbsp
Salt - to taste
Cooking InstructionsAdd salt and ghee to boiled water while it is still hot. Mix well. Add the rice flour little by little, mixing well with a spatula. Add the grated coconut and mix well. When the mix has cooled a bit, you may hand mix well. Heat a flat thick bottomed frying pan ( a cast iron skillet or traditional dosakkallu is best). Smear with a bit of ghee. Take a big ball of dough and flatten it on the pan without burning your fingers. Wet your hand a bit to help you shape it better. Spread it evenly in round shape but not too thin. After 3 or 4 minutes, turn to the other side. Leave other side to cook for another 3 to 4 minutes. Remove from heat and serve hot with curry or stew.
