Puttu (Rice puttu) Recipe

Rice flour - 2 cups
Grated coconut - 1/2 cup
Salt to taste
Puttu is made in a special vessel called 'puttukutti'. You can find other alternatives of steaming the puttu.
Take rice flour in a bowl and sprinkle water on it. Add a little salt and mix thoroughly. Keep sprinkling water in samll quantities and mixing evenly. Finally you should get a moist mixture of rice powder which is not too dry, not too watery. The quality and taste of the puttu depends on how well you have made the mix.
There should be enough water so that the puttu gets steamed well, at the same time too much water makes it too sticky.
Add little grated coconut to the bottom of the puttu vessel. Add a thick layer of puttu mix over it followed by another thin layer of grated coconut. Continue for 3 or 4 layers like this and end it with coconut at the top.
Boil water in the bottom vessel of the puttu kutti and when its boiled keep the puttu kutti (top vessel) on top of it. Cover the lid and steam until strong steam comes out through the holes at the top. Serve with kadala curry or pappadom or eat with banana and sugar.
