Kerala Style Chicken Stew Recipe

Ingredients Chicken : 500gm, cut into small pieces
Onion : 1, medium size, finely chopped
Ginger: 1/2 inch piece
Garlic: 3
Potato :2
Mixed vegetables - 1 1/2 Cups (Carrots, Beans and Grean peas)
Green Chilli - 4 thinly sliced
Pepper Powder : 1 Tsp
Turmeric powder : 1/4 tsp
Whole pepper : 5
Cinnamon : 2cm piece
Cardamom: 3
Cloves : 3
Curry leaves : 1 sprig
Coconut oil - 4 tablespoon
Coconut milk : 1 cup thick milk(first extraction) and 1 cup thin milk
Salt as per taste
Cooking InstructionsHeat the oil in a pan and add whole pepper, cinnamon, cardamom and cloves and sauté for a minute
Add the chopped onions and sauté again until the unions turn golden colour
Add the turmeric powder, pepper powder, green chilli, ginger and garlic and sauté for one more minute
Then add the chicken pieces and salt mix well and add one cup of thin coconut milk and bring it to boil.
Cover the pan with a lid and cook until the chicken is half cooked.
Now add the chopped vegetables, potatoes and curry leaves.
Cook again until the chicken and vegetables are fully cooked.
Then add the thick coconut milk, mix it and remove from the stove.
Garnish with a few more curry leaves on top.
Serve hot with Appam.
