Turkey - 4kg to 5kg
Lemon - 1, Quartered
Onion - 1, Peeled and Quatered
Butter - 50g
Parsley - A small bunch
Rosemay and Thyme - a few sprigs
Salt and pepper as per taste
Remove the neck and giblets and wash the turkey inside out. Pull out any tiny feather bits on it. Dry well with a kitchen towel.
(If you are choosing a frozen turkey then remove it from fridge atleast 2 hours before)
Preheat the oven to 190/375F/Gas 5.
Rub some salt along with the quartered lemon pieces on the inside of the turkey.
Put the parsley, onion and lemon pieces in the inside of the turkey.
Tie the legs of the turkey together and secure the neck flap with a wooden skewer.
Mix the butter with rosemary and thyme and rub the mixture all over the outside of the turkey.
Sprinkle salt and pepper over it.
Loosley cover with foil.
Place the turkey in a roasting tin greased with a little butter and roast it in the preheated oven.
To check if the turkey is cooked, insert a skewer into the thigh part and the juices should run clear and not pinkish.
When properly cooked remove from over and allow to cool for 20 minutes before carving.Photos (Click to enlarge) :
