Cooked Rice - 3 Cups. (you can use the left over rice from the fridge)
Eggs - 2
Green Peas - a handfull
Oil or Ghee - 2 TBsp
Chopped Garlic - 1 Tsp
Spring Onion -1
Soy Sauce - 2 Tsp
Salt and pepper to taste
Heat the oil in a wok or a pan.
Beat in the eggs and stir to break it up.
Keep stirring for 2 minutes.
Add the garlic and stir again.
Add the rice, carrots, green peas and spring onion and stir to mix all together (add little more oil if required)
Add salt and pepper to taste and stir.
when the vegetables are almost cooked add the soy sauce.
Stir for 1 more minute and egg fried rice is ready to be served
