Mutton - 1 Kg
Onions - 2, finely chopped
Curry Leaves - 1 Sprig
Tomato - 2, finely chopped
Coconut Milk - 2 Cups extracted from 1 coconut
Green Chilli - 5
Ginger - 1.5 inch piece, finely chopped
Garlic - 8 Cloves, finely chopped
Red Chilli - 1 TBsp
Coriander Powder - 2 TBSp
Turmeric Powder - 1/2 Tsp
Black Pepper Powder - 1 Tsp
Garam masala - 2 Tsp OR use 1 inch piece Cinnamon stick and a few cloves
Oil - 5 TBsp
Salt to taste
Wash and cut the mutton into small pieces.
Heat oil and saute the onions, ginger, garlic, green chillies.
When the onions turn golden brown add chilli powder, coriander powder, black pepper, garam masala and stir in very low flame for a minute.
Add the tomatoes and keep stirring for another 2 minutes.
Add the mutton and stir fry until the water from the mutton reduces.
Add salt and more water for the mutton to cook.
When the mutton is almost cooked add the curry leaves and coconut milk.
Reduce the heat and cook until the meat is tender.
Serve hot.
