Koottu Curry with Kadalaparippu Recipe

Ingredients Chana Dal (Kadalaparippu) - 1/2 cup
Grated coconut - 1 cup
Mixed Vegetables - 2 cups (cut into 1" pieces)
Choice of vegetables - chena (elephant gourd), vazhakka (raw plantain), mathanga (pumpkin), kumbalanga (snake gourd), yam, cucumber, beans, muringakka (drumstick)
1/2 tsp Turmeric powder
Cumin seeds - 1/2 tsp
4 Green chillies
Salt to taste
2 tbsp Coconut oil
1 tsp Mustard
Urad dal (Uzhunnuparippu) - 1 tsp
Dried red chillies - 4
Curry leaves - 1 sprig
Oil - 2 tbsp
Cooking InstructionsPressure cook the chana dal with salt, water and 1/4 tsp turmeric powder. Keep aside 1/4 cup of grated coconut for seasoning. Grind rest of the coconut with green chillies, cumin seeds and 1/4 tsp turmeric powder. When the dal is almost cooked , add the vegetables. Cook till vegetables are soft. Add the grated coconut and cook for few more minutes. Heat oil in a pan and splutter mustard seeds. Add urad dal, dried red chillies, grated coconut and curry leaves and saute well. Add this seasoning to the curry. Mix well and turn off the heat. Serve hot with rice.
