Kootu Curry Recipe

Ingredients Karuppu Kadala (Black chickpeas)- 1 cup
Selection of vegetables of your choice cleaned and diced - 4 cups
Vegetables that go well with this recipe are chena (yam), mathanga (pumpkin), pacha vazhakka (raw plantain), muringakka etc although you may use any available veggies
Grated coconut- 2 cups
Turmeric powder - 1/2 Tsp
Cumin seeds - 1/2 Tsp
Garlic - 2 pods
Black pepper powder - 1/2 Tsp
Mustard seeds - 1/2 Tsp
Dry red chillies (whole) - 2
Curry leaves - a sprig
Salt - to taste
Oil - 2 Tbsp
Water as required
Cooking InstructionsSoak the kadala overnight for 12 hrs. Cook in a pressure cooker adding turmeric powder, salt and just enough water. Cook the vegetables similarly in a seperate pot with just enough water to cover, until vegetables are tender. Grind together 1.5 cup of grated coconut with little turmeric powder, cumin seeds, garlic and black pepper powder. Add the coconut mixture and cooked kadala to the vegetable pot. In a seperate pan, splutter mustard seeds and add red chillies and the remaining 1/2 cup grated coconut. Add the curry leaves as well. When the coconut starts to turn to golden brown, remove from heat. Pour this seasoning to the vegetable pot. Mix everything well and simmer for about 3 to 5 minutes. Serve hot with rice.
