Ashgourd (Kumbalanga) - 1
Green Chilli - 6 (slit)
Coconut milk 1 cup
Red Oriental Beans (Vanpayar) - 1/4 cup
Coconut oil 2 tablespoon
Salt As required
Note : Instead of ashgourd you may use pumpkin. Instead of red oriental beans you may use cowpeas.
Soak the vanpayar (red beans) in water for about 2 hours. Cut the Bottle gourd (Kumbalanga) to fine slices.Cook the vanpayar with salt as required. (For easy cooking pressure cook the vanpayar). To this add the kumbalanga slices, slit green chilly and boil for 3-5 minutes.
Add coconut milk and check the salt. Optionally you may add a bit of jaggery. Bring to boil. Remove from fire and add curry leaves and coconut oil and mix well.
