Kerala Pork Curry Recipe

Ingredients Pork - 1 kg
Kashmiri Chilli powder - 2 Tablespoon
Turmeric - 1/2 Teaspoon
Vinegar - 1/2 Cup
Onions - 2 medium size
Dry Red chilli - 10 or more to make it more spicy
Tomato - 1
Mustard seeds - Tablespoon
Ginger - 1 inch piece
Garlic - 12 pods or around 2 cloves
Salt as per taste
Oil - 5 Tablespoon
Cooking InstructionsClean and cut the pork into small pieces
In a small bowl of hot water soak the dry red chillies for 15 minutes.
Drain the water and remove the seeds from the dry red chillies.
Peal the garlic and ginger.
Grind the dry red chilli, garlic, ginger, mustard seeds in a mixer grinder adding 1 tablespoon vinegar.
Peal and chop the onions and keep aside.
Chop the tomato in small pieces.
Take a large sauce pan and add the oil.
When the oil gets hot add the chopped onion and saute untiil golden brown.
Add the ground mixture of dry red chilli, garlic, ginger and mustard seeds and saute for around 2 minutes.
Add the chopped tomatoes and saute again until the oil seperates.
Add pork and half cup of water.
Cover and cook in high flame until the pork is well cooked. Add more water if needed.
Serve hot with rice or parotta.

I tried it and is very tasty. In the instruction it is not mentioned when and where to add Kasmiri chilli powder and leftover vinegar.Left by: Jacob Thomas (5 Sep 2014)
