Pork - 1 Kg
Onion - 2 , chopped
Turmeric - 1 Tsp
Vinegar - 2 TBsp
Green Chilli - 3
Dry Red Chilli - 10, split into small pieces
Chopped Ginger or paste - 1 TBsp
Chopped Garlic or Paste - 1 TBsp
Curry leaves - 1 sprig
Oil - 4 Tbsp
Wash and cut the pork into medium sized pieces.
Marinate with vinegar, turmeric powder and salt for 1 hour.
Heat 2 TBsp oil in a pan and add the marinated pork.
Stir for a few minutes and add 1 cup hot water.
Cook in low flame until the pork is well cooked (add more water if needed) and water is all dried up.
Allow it to cool and slice into small pieces.
In a frying pan add some oil and splutter the mustard seeds.
Add the chopped onions, dry red chilli, green chilli, curry leaves ginger and garlic and stir fry until golden brown.
Add the sliced pork and mix well. Continue stirring for a few minutes.
Add in more salt if required.
