500g of Pork cut into small pieces
1 cup finely chopped onions
1 small piece ginger, peeled and chopped
5 garlic cloves, peeled and crushed
5 tablespoon of vinegar
1/4 teaspoon of Turmeric powder
1 Tablespoon red chilli powder
5 Green Chillies, slit
1 Teaspoon garam masala powder or use the following spices instead
- 3 cardamom
- 1/2 tsp black pepper corns
- 5 cloves
- a small piece cinnamon stick, broken
4 Tablespoon oil
Salt, as per taste
a few curry leaves
Mix the pork with turmeric powder, chilli powder, ginger, garlic, vinegar and salt
Add water and pressure cook until the pork is nearly cooked.
Remove from heat and leave it aside to cool down.
Take a frying pan and add the oil.
When the oil is hot add the chopped onions, green chilli and curry leaves and saute until the onions are golden yellow.
Add the garam masala powder.
(Note: If you are using the spices instead of the garama masala powder then you can add that to oil before adding in the onions.)
Open the lid of the pressure cooker and add the cooked pork along with any extra water that remains in it.
Stir fry until the pork is well cooked and all the water evaporates.
Pork fry is now ready to be served.
PS: This is a kerala style pork fry recipe without using coconut. If you like it extra hot then add more red chilli powder.
