Pork - 1 Kg
Green Chillies - 5 (Finely Chopped)
Dry Red Chillies - 10
Cinnamon - 1 small stick
Cardamom - 3
Coriander - 1 TBsp
Garlic - 3 Pods
Ginger - 1 inch piece
Cumin - 1 Tsp
Turmeric - 1/2 tsp
Pepper - c
Vinegar - 5 TBSp
Oil - 5 TBSp
Salt as required
Curry Leaves - 1 sprig
Cut the meat into medium size pieces.
Grind red chillies in little vinegar and make a paste along with coriander, cumin, pepper, cinnamon, cardamom and turmeric.
Marinate the pork with the above masala paste, remaining vinegar and salt for atleast one hour.
Heat oil in a pan add chopped green chillies, curry leaves, ginger and garlic.
Saute for 2 minutes and add the meat and fry.
Cook in low heat until the pork is tender.
This dish goes well with chapatis, parotta or bread.
