4 cups cooked rice
1 Onion Chopped
2 large eggs
1/4 cup Green peas
1 Carrot (Finely Sliced)
1/2 cup Green Beans ( Finely chopped )
2 Green chillies Finely chopped )
oil or ghee for stir-frying
2 TBsp light soy sauce
1 TBsp Oyster sause
Salt to taste
Heat a wok or frying pan and add 2 tablespoons oil. Add the eggs and a pinch of salt. Cook, stirring, until they are lightly scrambled and keep aside.
Add three tablespoons oil/ghee in the pan and add chopped carrots, green peas, beans, green chillies, oyster sauce, soy sauce and salt. Stir fry the vegetables unitl they are well cooked. Add the rice. Stir-fry for a few minutes.
When the rice is heated through, add the scrambled egg back into the pan and mix thoroughly.
Serve Hot !!
