Basmati Rice - 2 cups
Ghee - 5 tbsp
Onion - 1
Cashew - 1 handfull
Raisins - 1/2 handfull
Cinnamon - 2" stick
Cloves - 5
Bayleaves - 2
Cardamom - 4
Pepper Corns - a few
Cumin - a pinch
Water - 3 1/2 cup
Salt to taste
Wash the rice well and keep soaked in water for half an hour. Meanwhile heat 2 tbsp ghee and fry onions, raisins and cashews separately and keep aside. Add the remaining ghee to the pan and add the spices (cinnamon, cloves, cardamom, bay leaves, cumin, pepper corns). Saute for 3 mins. Drain water from the rice and add the rice to the pan. Fry in medium heat for about 7 mins. Add 3 1/2 cups of water and required amount of salt and cook with closed lid until all water is gone. Check in between and stir to prevent rice sticking to the bottom. Serve with curry of your choice.Photos (Click to enlarge) :
