Roasted Rice Flour-2cup
Grated coconut-1/2 cup
Cardamom - 3 (ground to powder)
Sugar or jaggery (sharkkara) - depends on level of sweetness you need
Banana-1 (optional)
Salt - to taste
Oil or ghee -1 tbsp
Banana leaves
Make a soft dough adding hot water, ghee or oil, salt and rice flour. Mix first with a spatula and then with hand because in the beginning water is too hot. Make small balls and keep aside. Mix the grated coconut, cardamon powder and crushed sharkkara (or sugar) together. If you like add banana pieces also and crush well with your hand and blend with the mix. Now spread each dough ball on a banana leaf. Fill with the coconut mix in the centre, fold in half and seal the sides. Steam the elayappams in a pressure cooker or steamer.
