Smoked bacon rashers - 6
Red, yellow or green lentils - 1/2 cup
(You may use toor dal or mung dal instead)
Garlic cloves - 4
Onion - 1
Grated cabbage/carrot/celery or a mix of these - 1/2 cup
Tomato - 2
Vegetable stock - one cube
(Or you may use freshly prepared stock made by boiling your choice of vegetables)
(Instead of veg stock you may use chicken/beef stock)
Water - 2 cup
Oil - 4 Tbsp
Chop finely the tomatoes, other vegetables, bacon rashers, garlic and onion. In a soup pan or stock pot, saute the bacon until fat starts to separate. Add in the garlic, onions, lentils and oil. Saute for a few more minutes. Add the tomatoes and other vegetables and water. Cover and cook in medium fire for about 30 minutes, stirring in between to check if the mixture starts sticking to bottom. Now reduce the flame and put in simmer. Add the stock, either half cup of freshly prepared stock, or make stock by mixing stock cube in half cup hot water. Cook in simmer for 5 minutes. Serve hot with bread.
