Thai Rice - 1/2 Cup
Chicken Breast Fillets - 200gm, Cut into small pieces
Onion - 1, finely chopped
Chopped Spring Onions - 3 TBsp
Ginger - 1 small piece, finely chopped
Garlic - 1 clove, finely chopped
Fish Sauce - 2 TBsp
Oil - 1 TBsp
Salt and Pepper to taste
Coriander Leaves - a few sprig
Thinly sliced red chilli - 1 TBsp
Cook the rice in a large sauce pan adding enough water until it becomes like porridge. Keep aside.
Heat oil in a wok and stir fry onions, ginger and garlic.
Add the chicken, fish sauce, salt and pepper and stir fry until the chicken is cooked.
Mix in with the cooked rice and garnish with the spring onions and coriander leaves and red chilli.
Serve hot on soup bowls.
