Banana Muffins Recipe

Ripe banana - 2
Eggs - 2
Self raising flour - 200 g
Baking powder - 1 Tsp
Castor sugar - 100 g
Melted butter - 3 Tbsp
Vanilla essence - 1 Tsp
Any dried fruits/ nuts of your choice - 2 Tbsp
Beat the eggs well in a bowl using an electric or hand blender. (Whites first and yolk later to incorporate as nmuch air as possible). Add in the melter butter and sugar and beat again until you get a mixture of creamy consistency. Mash the bananas into a paste in a mixer. In a separate bowl, mix the mashed bananas, melted butter, self raising flour, baking powder, dried fruits or nuts, vanilla essence and mix well. Now fold in this mixture to the already prepared egg and sugar mix. Do this gently with patience so that the mixture is still with lot of trapped air. (Folding means mixing gently , little by little). In a muffin baking tray, place paper cases and coat them with butter. Pour the banana mixture into the paper cases. Preheat the oven to 190 C. Place the baking tray inside and cook for about 20 mins. Check if the muffins are cooked and if not, cook for another 5 or 10 minutes. Serve hot as a tasty afternoon snack.
