Carrot (cleaned and grated) - 1kg
Coconut (grated) - 1 cup
Milk (full fat whole milk) - 2 cups
Unsalted butter or ghee- 2 tablespoons
Condensed milk - 200g
Vanila essence -1/4 teaspoon
Cardamom powder - few pinches
Sugar - as required
Add grated carrots to a pan and pour in the milk.
Cook in medium flame and when it start boiling reduce heat to simmer.
Keep stirring the mixture and slowly cook until milk is reduced to one fourth.
Add coconut. Stir well and cook until mixture is almost dry.
Add condensed milk and sugar.
Mix well and add the ghee, cardamom powder and vanilla essence.
Turn off the heat and serve as a warm dessert.
Serving suggestion: Decorate it with fried cashews and raisins.
