Carrot-2 cup, grated
1st milk-1 cup
2nd milk-2 ˝ cups
Cashew nut- a hand full
Cook the grated carrot and keep it aside.
Melt and filter the jaggery and keep it aside.
Heat a bottom thick vessel and sauté the melted jaggery and cooked carrot in it.
Then add the 2nd coconut milk and boil the mixture by stirring it continuously.
Once the 2nd milk boils, add the 1st coconut milk, cardamom and stir for some time. Take it from flame before it boils this time.
Heat ghee in another pan and sauté the raisins and cashew nut in it.
Pour this mixture to the payasam along with a pinch of salt and mix well.
