IngredientsBeetroot grated -1 small sized
Turmeric powder – 1/4 tsp
green chillies- 3
Yogurt / Curd – 1 cup
Grated coconut – 1/2 cup
Small onions/Shallots – 4
Red chillies - 3
Curry Leaves - a few
Salt to taste
Oil as needed
Mustard Seeds - 1 tsp
Cooking InstructionsCook beetroot with turmeric powder,salt and a (very) little water ,until it is soft and dry. Grind the coconut, green chillies and mustard seeds (1/4 tsp). Mix in the ground mixture and simmer for few minutes.Switch off the heat and add lightly mashed curd and salt.Heat oil in another pan and pop the remaining mustard seeds.Add in red chillies,curry leaves and shallots and fry them until brown.Add this seasoning to the pachadi.

Serve with rice.
