Potatoes (cut into cubes) - 2 cups
Brinjal (cut in to cubes) - 2 cups
Shallots - 4 (finely chopped)
Turmeric powder - 1/4 Tsp
Whole red chillies (crushed) - 4 or 1 Tsp chilli powder
Cumin powder - 1/2 Tsp
Garam masala - 1/2 Tsp
Mustard seeds - 1/2 Tsp
Water - 1 cup
Oil - 2 Tbsp
Salt - to taste
Heat oil in a pan and splutter mustard seeds.
Throw in the shallots and saute for about 3 minutes.
Add the turmeric powder and chilly powder (or crushed whole red chillies) and saute for another two minutes.
Add the cubed potatoes and water and salt as per taste.
Cover the pan and cook in medium heat for about 5 minutes.
Add the cumin powder and garam masala as well as the brinjal pieces, mix well.
Mix well and cover and cook in medium heat for another 5 minutes, stirring once in between to prevent sticking to the pan. Serve hot with chappathis or rice.
