Ginger - 250 gm
Turmeric powder - ½ tsp
Green chillies - 8 nos
Chilly powder – ½ tbsp
Tamarind - 1 lemon size (soaked in one cup water)
Jaggery – 1/2 tbsp (or according to you taste)
Oil - As reqd
Mustard seeds - a few
Curry leaves – 1 sprig
Salt - As required
Remove the skin of the ginger, chop finely. Heat oil in a pan and fry the ginger till light brown. Remove from oil and keep sometime to cool. Grind the ginger into fine paste. Heat the oil again (previously used for frying ginger), add onions and green chillies. Saute well. Add, chilly powder and turmeric powder.
Add fried ginger paste and fry till oil starts to separate. Add tamarind water and jaggery and cook till the curry thickens.
Heat oil in another pan and splutter mustard seeds.The add curry leaves and fry. Add the above seasoning to the curry.
