Kerala Style Potato Curry Recipe

Ingredients Potoato - 2 large
Onion - 1 large
Turmeric Powder - 1/2 Tsp
Chilli Powder - 1 Tbsp
Coriander Powder - 2 Tbsp
Garam Masala - 1/2 Tsp
Mustard seeds - 1/2 Tsp
Curry leaves - a few
Coconut Milk - 1 Tbsp
Oil - 3 Tbsp
Water - 1 cup
Salt - as required
Cooking InstructionsPeel and cut the potatoes into small cubes. Remove the skin and slice the onions lengthwise. Boil the potatoes and onions in 1 cup water adding salt and turmeric till the potatoes and onions become soft. Keep aside. In another pan heat oila nd splutter mustard seeds. Add the coriander powder and chilli powder to the oil and saute for a minute. Lower the flame and add the boiled potato mixture. Stir well and add in the garam masala and curry leaves. Simmer for about 5 minutes. Add the coconut milk, stir well and remove from flame.
Note: Add just a tablespoon of coconut milk, not more. This is just to enhance the flavour.
Also the level of spiciness can be adjusted to your liking by adding more masala. Just be sure that coriander powder is twice the amount as chilli powder if you need to add more of either.
