Potato Podimas Recipe

Ingredients Potato - 1 large
Onion - 1 large
Shallots (Kunjulli) - a few
Green Chillly - 4
Water - 1/2 cup
Turmeric Powder - 1/2 Tsp
Mustard Seeds - 1/2 Tsp
Curry leaves - one sprig
Coconut Milk - 1 Tbsp
Salt - To taste
Oil - 2 Tbsp
Cooking InstructionsPeel and cut the potatoes in to small cubes. Cut the onion into four pieces. Boil the potatoes and onions in a pan adding green chillies, salt and turmeric powder. When the potatoes and onions are soft, mash everything into a fine paste. In another pan heat oil and splutter mustard seeds. Saute the shallots until golden brown. Add the curry leaves and saute for few more minutes. Add the potato mix to this. Mix well and bring to boil, adding little more water if needed. Reduce to required consistency, ie, as thick or light as you prefer. Lower the flame and add the coconut milk. Mix well and switch off. Serve hot with chapathi, roti or dosa.
