Tomato Soup Recipe

Ingredients Plum tomatoes - 3 (diced)
Tomato puree - 2 Tbsp
Onion - 1/2
Carrot - 1
Celery - 1 stick
Courgette - 1
Bay leaves - 2
Ground black pepper - 1/2 Tsp
Basil - a pinch
Vegetable stock - 1 cup
Water - 1 cup
Salt to taste
Olive oil - 2 Tbsp
Cooking InstructionsChop the vegetables. Heat oil in a pot and add the onions. Saute well for about 3 minutes. Add the carrot, courgette and celery. Mix well. Cook in low heat for about 5 minutes stirring in between. Add the tomato puree and mix. Cover the pot and add the water and salt as per your taste. Bring to boil and simmer for about 5 minutes. Add the bay leaves, vegetable stock and diced tomatoes. Bring to boil again and simmer for another 15 minutes. Season with pepper and basil. Leave it to cool. Once its cooled, blend the soup in a blender to a smooth consistency.
