IngredientsServes 2-4

300g Quorn chicken style pieces (fresh or defrosted). Quorn is microprotein and is a healthy food and an alternative to meat, especially for vegetarians.
200g Fresh thread rice noodles
400g Fresh vegetables (babycorn, sugarsnap peas, carrots, mushroooms)
150g stir fry sauce ( choose your own flavour, I like Szechuan)
Light soy sauce to season
Groundnut oil for wok to avoid sticking
Cooking InstructionsHave all the ingredients close to hand this is a very easy and fast recipe, it can be taken from start to the table in 5-10 minutes - it should be served immediately.

Heat a small amount of groundnut oil in a wok, before it smokes add the quorn pieces and allow to cook and brown, season with light soy sauce, after one minute add the rice noodles and continue strirring around quickly.

Toss in the vegetables, and cook till hot and crunchy, when the vegetables are almost cooked add the stir fry sauce, if too thick add a small amount of water. Don't allow it to over cook, just let it cook through nicely and ensure all the ingredients are well covered. Serve immediately while steaming hot. Enjoy!
